I’m always on the lookout to make new recipes that can double up as a lunch and a dinner. I’ve found it’s much cheaper to make a big batch of something and use it again the next day at work…plus most meals taste better the second time round!
If you have a microwave at work then veggie curries, chilli’s and pasta dishes are great for re-heating on the go. Just make sure everything is well cooked through before eating.
These baked courgette fritters come in at less than 100kcal per serving and are great paired with a rocket salad or some sweet potato fries. Plus, they are really easy to make and only require three ingredients!
I like to eat the fritters hot or cold, double up the mixture for your weekday lunch box!
2 courgettes, grated
100g soft goat’s cheese
1 medium egg
Salt and pepper
Preheat oven to 200 degrees °C
Start by removing the water from the grated courgette. This is really important as you will end up with soggy fritters otherwise! Use a clean tea towel and squeeze the excess water into a bowl.
In a separate bowl, beat the egg and slowly add in the goat’s cheese to form a thick mixture.
Combine with the courgette and add salt and pepper to taste.
Line a tray with baking paper, and spoon out eight even amounts of the mixture to form fritters.
Bake for 20 minutes before turning over and baking for another 15 minutes.
